Radiator & Revotec fan

Radiator needed replacement. Give or take 13 years old. Decided to replace the viscus fan with a dual electric Revotec. Before the radiator went south I would run pretty close to 180 in most all ambient temperatures. I was running a 160 thermostat and the VDO gage registered 180. I replaced it with a 180 thermostat. Can I expect it to run near 200? Seems like it might be a bit warm to me. Maybe return to my 160? We will see.
