If you have the older style seat with the hard back unscrew it you will have 4 screws holding it on. If you have the newer style all fabric, You will see a plastic zip lock type interlock running the length on the back side of the bottom of the seat cover. Place a small pick in between the plastic and you can pull it apart. Then pull the whole cover up exposing the foam and seat frame. Once you have access to the back of the seat you will see a small foam tab about 3" x 4" coming down from the top. Lift up and you will see the post for the head rest. You will see a small metal clip inserted into the bottom of the post which keeps it from pulling out of the frame. Just bend and remove from the bottom and the headrest. The post will now lift out. FYI I typically do not reinstall this part
You"ll need to reach up to the bottom of the post and push in a small spring steel tab on the very bottom which holds it in. It is on the edge where my finger is holding the post in the attached picture.

What a pain, but headrest on one seat is off and the Melvill & Moon seat cover is installed.
Even with the lock released, the headrest had to be hammered out. Melvill & Moon
I've meant to do this for a while... how much time did it take you to do that one seat? (Starting from where you got hint on how to get the headrest out)
