Are the heads on a '97 disco the same as those on a '94 Defender?

Nope. Less head bolts on a '97 head than on a '94.

After doing heads on the 3.9 and the 4.0 I would keep the old style head and bolts over the stretch bolts. I hate those things. I know the theory but I am much more confident that i have torqued everything on the old style than the new style. I followed the book on the stretch bolts and had the heads done by the machine shop but it seemed to me that some bolts were harder to turn those additional degrees than others. just didn't sit well with me.

Yes, and if you use the old heads with the new gaskets, your compression ratio will be lower due to the thickness difference of the gaskets.

Unless your heads are out of spec a machine shop should not charge much to do a valve job on them and shave off the minimum to put them back on. I just had mine done (went back in the truck today). Total was just over $300.

I purposely used the new style gaskets with old syle (87) heads when I built my 4.6 to lower the compression ratiio so I could run regular gas. Its worked well. Oh and I used the old style head bolts too.
