I would pull the plugs and get a compression check.
Hard starting when warm is sometimes a result of low compression.

When tying to start, does it ever want to slow way down or "jump backwards"?

Most "carburetor problems" really turn out to be ignition problems in my experience.
I've had good luck running a Rochester carb with a smaller main jet as well. I've also seen some very sweet running 2.25 engines using a side draft SU carb conversion.
